Shrimp Recipes – Abalone, Fish and Shrimp Balls
Chinese shrimp recipes are truly delicious, and this particular one is fairly easy to make. It includes abalone, which is used to give soups a really distinctive flavor. It is a rather expensive ingredient and is also considered by the Chinese to be a symbol of wealth. You can buy it either fresh or canned. In this recipe we have used 1 can of abalone but you can also use fresh or dry. When cooking it, avoid the ones that have darkened.
The ingredients you need:
1 can abalone
4 oz shrimps or prawns
4 oz fish (cod, halibut, carp, haddock ,bream, etc)
2 oz pork fat
1 lightly beaten medium egg
3 tbsp cornflour
2 oz ham
2 oz parsley, preferably fresh
¾ pint chicken broth
½ tsp M.S.G.
½ tsp salt
Fresh ground black pepper to garnish (optional)
1 slice root ginger
1 tbsp sherry
Chop the abalone, shrimps and fish and pound into a fine paste. Chop pork fat coarsely. Mix them together in a basin with beaten egg and cornflour. Form the mixture into balls about half the size of hen’s eggs.
Mince the ham and the parsley and keep separate. Dip one side of each ball in the minced ham, and the other in the minced parsley. Put the balls in a deep heatproof dish in a steamer and steam vigorously for 20 minutes or so.
Meanwhile, heat the chicken broth in a small pan, add M.S.G., salt, ginger and sherry and simmer for three minutes or so. Pour the broth over the fish balls, and bring the dish to the table. This is not exactly a soup in the normal western sense, but a semi-soup which, like all ochinese soups, is kept on the table throughout the meal.
